To begin making the Chunky Cucumber Salsa, lay the cucumbers on a flat wooden surface or working space
cucumbers - washed(3) - 2
Use a rolling pin and bash the cucumber into bite size chunks
tomato - cut into chunks(1) - 3
Alternatively, use a wooden mortar pestle to roughly break the cucumbers down to chunks
cucumbers - washed(3)tomato - cut into chunks(1) - 4
In a bowl toss together the cucumber chunks, tomato, onion, garlic and coriander leaves
red onion - diced(1)tomato - cut into chunks(1)cloves garlic - minced(2)coriander (dhania) leaves - one bunch-3 spring onion greens - for garnish (optional)(2) - 5
Add the jalapenos, black pepper, salt, lime juice and toss again
pickled jalapenos - chopped(2)whole black peppercorns - freshly cracked(1/2 teaspoon)salt - to tastelemon juice - of large limes(2) - 6
Garnish with spring onion leaves

Chill for half an hour and then serve
