To make pumpkin capsicum vegetable, first heat oil in a pan
pumpkin(1 kg)capsicum (green) - chopped(1)oil(1 teaspoon) - 2
Add mustard seeds, cumin seeds and fenugreek seeds
mustard(1/2 teaspoon)cumin(1 teaspoon)fenugreek seeds(1/4 teaspoon) - 3
Allow to cook for 10 seconds

After 10 seconds, add green chili, capsicum and let it cook for 2 to 3 minutes
capsicum (green) - chopped(1)green chili - finely chopped(1) - 5
Now add turmeric powder, red chilli powder, tomato, pumpkin, sambar powder, salt and jaggery
pumpkin(1 kg)turmeric powder(1 teaspoon)sambar powder(1 teaspoon)jaggery(1 tablespoon)salt - as per taste - 6
Mix and let it cook for 2 minutes

Allow the pumpkin to cook

After cooking, turn off the gas and garnish with green coriander

Serve the Pumpkin Capsicum vegetable with Phalguni Dal and Tawa Paratha
