Kerala Style Tomato Fry Recipe

To begin making the Kerala Tomato Fry Recipe, heat oil in a heavy bottomed pan

Add mustard seeds, dry red chillies and let the mustard seeds crackle
mustard seeds(1 tablespoon)dry red chillies - torn into(3 pieces)green chillies - chopped(2)kashmiri red chilli powder(1/2 tablespoon) - 3
Once mustard seeds start to crackle, add curry leaves, green chillies and onions
mustard seeds(1 tablespoon)dry red chillies - torn into(3 pieces)curry leaves(5)onions - thinly sliced(2)green chillies - chopped(2)kashmiri red chilli powder(1/2 tablespoon)tablespoons coriander (dhania) leaves - finely chopped(2) - 4
Saute it for 1 minute and add ginger garlic paste
ginger garlic paste(1 tablespoon) - 5
Saute it again till onion turn into golden brown in colour
dry red chillies - torn into(3 pieces) - 6
Next add kashmiri red chilli and turmeric powder
kashmiri red chilli powder(1/2 tablespoon)turmeric powder (haldi)(1/2 tablespoon) - 7
Mix well and add the chopped tomatoes
tomatoes - chopped (big pieces)(4)green chillies - chopped(2)tablespoons coriander (dhania) leaves - finely chopped(2) - 8
Let it cook 5 for 7 minutes till the tomatoes turn soft
tomatoes - chopped (big pieces)(4) - 9
Add the required salt and cook for another few seconds
sunflower oil - as requiredsalt - to taste - 10
Turn off the flame, transfer it in a bowl and garnish it with fresh chopped coriander leaves
