Kodava Kootu Curry Recipe - Coorg Style Mixed Vegetable Stew
A vegetarian Coorg recipe with carrots (gajjar) - peeled and cut into big chunks, green beans (french beans) - chopped to 1/2 an inch pieces, brinjal (baingan / eggplant) - cut into big chunks. Ready in 35 min, serves 4.

To begin making the Kodava Kootu Curry Recipe - Mixed Vegetable Stew, chop all the vegetables and keep it ready
sprig curry leaves(1) - 2
Heat a flat skillet on medium heat, drizzle some ghee add in mustard seeds an cumin seeds and allow it to crackle for few seconds
ghee - for cookingmustard seeds(1/2 teaspoon)cumin seeds (jeera)(1 teaspoon)coriander (dhania) seeds(2 teaspoon)ghee(1 tablespoon)mustard seeds(1 teaspoon)ghee(1 tablespoon) - 3
Add coriander seeds, chana dal, urad dal, uncooked rice, dry red chillies and saute for few minutes till they are lightly roasted
mustard seeds(1/2 teaspoon)cumin seeds (jeera)(1 teaspoon)coriander (dhania) seeds(2 teaspoon)-/2 teaspoons white urad dal (split)(1)chana dal (bengal gram dal)(2 teaspoon)dry red chillies(4)rice(1 teaspoon)mustard seeds(1 teaspoon) - 4
Add in grated coconut and turmeric powder and saute till the coconut have lightly roasted
fresh coconut - grated(1/4 cup)turmeric powder (haldi)(1 teaspoon) - 5
Once done, cool them down and add all the ingredients into a mixer along with tamarind and little bit of water and grind it into a smooth paste
carrots (gajjar) - peeled and cut into big chunks(3)brinjal (baingan / eggplant) - cut into big chunks(1)tamarind(10 grams) - 6
Pressure cook the vegetables along with a little salt and 1/4 cup of water for 2 whistles and turn off the heat
salt - to taste - 7
To make the Kootu Curry, keep a pressure cooker on over a medium heat
sprig curry leaves(1) - 8
Drizzle some oil add chopped tomatoes and saute till they turn slightly mushy
green beans (french beans) - chopped to 1/2 an inch pieces(250 grams)tomatoes - chopped(2)cloves garlic - finely chopped(4) - 9
Add in the ground coconut paste, keep stirring for couple of minutes, add the washed toor dal along with 1-1/2 cups of water, salt to taste and pressure cook the dal for 4 to 5 whistles and turn off the heat
arhar dal (split toor dal) - toor dal(1/4 cup)salt - to tastefresh coconut - grated(1/4 cup) - 10
Allow the pressure to release naturally and stir in the cooked vegetables and give the kootu curry one last mix
sprig curry leaves(1) - 11
Check the salt and adjust to taste accordingly
salt - to taste - 12
Once done, transfer the Kootu curry to a serving bowl

To make the tempering, heat a tadka pan on medium heat, drizzle ghee, add in mustard seeds and allow it to splutter
ghee - for cookingmustard seeds(1/2 teaspoon)cumin seeds (jeera)(1 teaspoon)coriander (dhania) seeds(2 teaspoon)ghee(1 tablespoon)mustard seeds(1 teaspoon)ghee(1 tablespoon) - 14
Add curry leaves and leave it to splutter and add garlic and pinch of hing, saute till they soften
green beans (french beans) - chopped to 1/2 an inch pieces(250 grams)sprig curry leaves(1)cloves garlic - finely chopped(4) - 15
Once done pour this tempered ingredients over the Kodava Kootu curry and serve hot
