Instructions

20 steps
  1. 1

To begin making the Malida Recipe, tear the Roti to bite sized pieces

    leftover roti(8)
  2. 2

Process the roti to coarse texture using Food Processor

    leftover roti(8)
  3. 3

You would get about approximately 3 cups of the roti mixture

    leftover roti(8)
  4. 4

    Keep this aside

  5. 5

The next step is to process the dry fruits

  6. 6

First add the almonds and make a course powder

    cardamom powder (elaichi)(1/2 teaspoon)
  7. 7

Into a large mixing bowl, add the powdered almonds, chopped dates, cardamom powder and jaggery

    jaggery - grated(1/4 cup)cardamom powder (elaichi)(1/2 teaspoon)dates - (pitted) finely chopped(1/4 cup)
  8. 8

    Stir well to combine

  9. 9

    Keep this mixture aside

  10. 10

Our next step is to lightly roast the roti powder in ghee

    leftover roti(8)cardamom powder (elaichi)(1/2 teaspoon)tablespoons ghee(2)
  11. 11

Heat a heavy bottomed pan on low heat and melt the ghee

    tablespoons ghee(2)
  12. 12

Add in the Roti powder and stir well

    leftover roti(8)cardamom powder (elaichi)(1/2 teaspoon)
  13. 13

Roast the whole wheat roti for about 5 to 7 minutes or until the powder is hot enough

    leftover roti(8)cardamom powder (elaichi)(1/2 teaspoon)
  14. 14

The reason we roast on low heat, is so that it becomes crisp slightly and the heat also helps in binding the remaining ingredients to make the malida

  15. 15

Add this toasted powder to the wide bowl with other ingredients

    cardamom powder (elaichi)(1/2 teaspoon)
  16. 16

Combine all the ingredients together using your hand

  17. 17

Once mixture feels wet, start making small bite balls out of the Malida Mixture

  18. 18

Malida would be little sticky while making balls but the jaggery will get hard and hold shape once it rests for a few minutes

    jaggery - grated(1/4 cup)
  19. 19

Serve the Malida as a tea time snack or as a healthy lunch box snack for kids
