To prepare Sukhi Dahi Wali Lauki Recipe (Yogurt Based Bottle Gourd Sabzi), firstly, heat oil in a Kadai
-/2 bottle gourd (lauki) - peeled and chopped(1 cup) - 2
Add cumin seeds, mustard seeds, curry leaves and green chillies
cumin seeds (jeera)(1/2 teaspoon)mustard seeds(1/2 teaspoon)curry leaves(5)green chillies - finely chopped(1)red chilli powder(1 teaspoon) - 3
Once the mustard seeds crackle, add the garlic and onions
cumin seeds (jeera)(1/2 teaspoon)mustard seeds(1/2 teaspoon)cloves garlic - finely chopped(3)onion - finely chopped(1) - 4
Cook till the onions become soft and translucent
onion - finely chopped(1) - 5
Next add the chopped lauki and give it a stir
-/2 bottle gourd (lauki) - peeled and chopped(1 cup)green chillies - finely chopped(1)cloves garlic - finely chopped(3)onion - finely chopped(1)tomato - chopped(1) - 6
Add salt, turmeric powder and cover the pan with a lid
red chilli powder(1 teaspoon)turmeric powder (haldi)(1/2 teaspoon)coriander powder (dhania)(1/2 teaspoon)salt - as required - 7
Let it cook for about 3 to 4 minutes

Next, add the tomato, red chilli powder and coriander powder
tomato - chopped(1)red chilli powder(1 teaspoon)turmeric powder (haldi)(1/2 teaspoon)coriander powder (dhania)(1/2 teaspoon) - 9
Mix everything and cover the pan again

Meanwhile, whisk the curd with required water in a bowl and keep it aside
curd (dahi / yogurt)(1/4 cup)salt - as requiredwater - as requiredsunflower oil - as required - 11
When the lauki/bottle gourd becomes soft, turn the flame on low, add the curd/yogurt and stir continuously

Once Sukhi Dahi Wali Lauki is mixed properly, cover the pan again and let it cook for about 6 to 8 minutes until most of the liquid evaporates
