In large mixing bowl, combine egg whites, 1/2 pound sugar, corn syrup, extract and food color.

Beat on low speed until ingredients are just blended.

Increase speed to high; beat until stiff peaks are formed, occasionally scraping bowl with rubber spatula.

Beat time is 7 to 8 minutes.

With mixing spoon, stir in 1/2 of remaining sugar (about 1/4 pound).

Sprinkle a little of remaining 1/4 pound sugar onto work surface.

Gradually knead in sugar until dough is smooth, but still slightly sticky.

Assemble cookie press; fill with mint mixture, following directions.
