Preheat the oven to 180 C, grease a baking pan with butter and dust it flour and keep aside

Sift the flour and baking powder in a bowl and keep aside

In a large mixing bowl, using a hand mixer, beat in the eggs until creamy

Add the vanilla essence and sugar and beat

Gradually add the flour mixture, the grated carrots, and finely chopped cashewnuts

Beat until all the ingredients are just about combined

Once well combined, pour the carrot cake batter into the prepare baking pan and place it in the preheated oven

Bake in the preheated oven, for about 35 to 40 minutes until the tester inserted in the center comes out clean
