To prepare Chinese Savoury Rice Porridge With Pumpkin, in a saucepan add rice, water or stock, salt and ginger pieces
rice(1 cup)water - or vegetable stock(6 cups)salt - to tasteginger - grated or cut into thin strips(1 teaspoon) - 2
Stir and add pumpkin cubes
kaddu (parangikai/ pumpkin) - cut into cubes(1 cup) - 3
Stir in and add pumpkin cubes
kaddu (parangikai/ pumpkin) - cut into cubes(1 cup) - 4
Cook covered on low to medium heat for about 30 to 40 minutes or until rice are soft and mushy
rice(1 cup) - 5
Check black pepper seasoning
whole black peppercorns - freshly crushed - 6
Just before serving, add handful of chopped scallions and cilantro leaves
spring onion greens - choppedcoriander (dhania) leaves - chopped - 7
