Heat a kadai pan with oil, add the onions, green bell peppers, ginger, garlic and sauté until the onions and peppers are tender
onion - diced(1)green bell pepper (capsicum) - diced(1)ginger - grated(1 teaspoon)cloves garlic - finely chopped(2)black pepper powder(1 teaspoon) - 4
Once the onion and peppers have turned slightly tender, add the tomatoes, turmeric powder, cumin powder, black pepper powder, red chilli powder and saute until the water from the tomatoes have evaporated and become a thick paste
onion - diced(1)green bell pepper (capsicum) - diced(1)homemade tomato puree(1 cup)turmeric powder (haldi)(1 teaspoon)cumin powder (jeera)(1 teaspoon)red chilli powder(1 teaspoon)black pepper powder(1 teaspoon) - 5
Add butter, salt, cardamom powder or badi elaichi and and sauté for few more minutes
cardamom (elaichi) pods/seeds(1)turmeric powder (haldi)(1 teaspoon)cumin powder (jeera)(1 teaspoon)red chilli powder(1 teaspoon)black pepper powder(1 teaspoon)butter(1 tablespoon)salt - to taste - 6
Cut the egg into half and add the egg pieces and kasuri methi
kasuri methi (dried fenugreek leaves)(1 teaspoon) - 7
Cover the pan and simmer the kadai Egg for a few minutes on low heat

After a few minutes, turn off the heat

Check the salt and spice levels and adjust to suit your taste
salt - to taste - 10
Transfer the Kadai Egg to a serving bowl and serve warm
