To begin making the mix vegetable Risotto, first warm the stock
vegetable stock - (or as required)(3 cups) - 2
Heat oil in a pan

Add garlic and onion
onion - finely chopped(1)cloves garlic - minced(3) - 4
Sauté till the onion just softens, but does not brown
onion - finely chopped(1) - 5
Add the rice and stir
arborio rice(1 cup) - 6
Sauté for a minute till the rice starts getting translucent
arborio rice(1 cup) - 7
Add a ladleful of the warm stock
vegetable stock - (or as required)(3 cups) - 8
Stir and cook till the stock almost evaporates
vegetable stock - (or as required)(3 cups) - 9
Add another ladleful of stock
vegetable stock - (or as required)(3 cups) - 10
Stir and cook again

Repeat till the rice is just cooked, till it still has a bite to it

Add the vegetables and stir
mixed vegetables - chopped and blanched (you can use peas(1 cup)vegetable stock - (or as required)(3 cups) - 13
Take it off the heat

Add pepper, ricotta cheese and butter
butter(2 tablespoon)ricotta cheese(3 tablespoon)parmesan cheese - shavings as required - 15
Mix and keep covered for a minute or two till it becomes creamy

Garnish with parmesan cheese and herbs and serve immediately
