Pakistani Roasted Gosht Recipe

To begin making the Pakistani Bhuna Gosht recipe, wash mutton nicely and keep it aside
mutton - cut into medium pieces(750 grams) - 2
Heat oil in a heavy bottomed pan and add whole spices and let them crackle
whole black peppercorns(5) - 3
Now add whole garlic pods and ginger slices and saute them till golden
garlic(1/2 cup)inch ginger - sliced(4)whole black peppercorns(5) - 4
Add sliced onions and fry till they are soft and translucent
onions - sliced(6)inch ginger - sliced(4) - 5
Once the onions are soft, add washed mutton and mix well
mutton - cut into medium pieces(750 grams)onions - sliced(6) - 6
Next add thick curd and salt and let it cook on high flame till the curd starts leaving water from sides
curd (dahi / yogurt)(3/4 cup)salt - as required - 7
As soon as the water starts appearing from sides, close the lid, simmer the gas and let it cook till mutton is soft and tender
mutton - cut into medium pieces(750 grams) - 8
When the mutton is cooked, add coriander powder, turmeric, red chilli powder and mix together
mutton - cut into medium pieces(750 grams)-1/ tablespoons coriander powder (dhania)(2)teaspoons red chilli powder(2)turmeric powder (haldi)(1/2 teaspoon)tablespoons coriander (dhania) leaves - chopped(2) - 9
Turn the flames high and start frying everything till oil starts leaving from sides

Keep adding ghee while frying
tablespoons ghee(4) - 11
Once the ghee/oil starts oozing out from the sides, check salt again and adjust if required
salt - as requiredtablespoons ghee(4) - 12
Slowly the mutton will start to thicken and turn deep brown in colour
mutton - cut into medium pieces(750 grams) - 13
Turn off the gas and garnish the Bhuna Gosht with lots of coriander
