Sweet Corn & Avarakkai Sundal Recipe

To begin making the Sweet Corn & Avarekalu Sundal Recipe, pressure cook the avarekalu beans with water about an inch, sprinkle some salt and cook for just 1 whistle
sweet corn(1 cup)avarekalu / lilva beans(1 cup)salt - for taste - 2
Switch off the heat

Allow the pressure to release naturally and drain all the water

Keep the avarekalu aside
avarekalu / lilva beans(1 cup) - 5
Heat a heavy bottomed pan/kadhai with oil, add mustard seeds and allow the seed to splutter for few seconds
mustard seeds(1 teaspoon) - 6
Once it splutters, add curry leaves, dry red chilli, asafoetida and allow the curry leaves to crisp up
asafoetida (hing)(1/2 teaspoon)dry red chilli(2)or 5 curry leaves - roughly torn(4) - 7
Then add the cooked beans, sweet corn and toss for about 10 minutes

Finally, add the grated coconut and cumin powder, salt for taste
fresh coconut - grated(1/2 cup)cumin powder (jeera)(1 tablespoon)salt - for taste - 9
Toss well and serve
