To begin making the Uttar Pradesh Style Shir Sewain Recipe, add a tablespoon of milk to the saffron and keep it aside till we further add it into the dish
liter milk(1)saffron strands(1/4 teaspoon) - 2
Heat ghee in a wide pan and fry the raisins and cashews
tablespoons raisins(2)tablespoons cashew nuts - halved(1)tablespoons ghee(2) - 3

Add the vermicelli to the same pan and saute until it turns golden colour

This will take around 3 minutes

To this add the milk and let the vermicelli cook for 5 minutes

Add the sugar and let it fully dissolve in the kheer mixture

Let the kheer simmer for 10 minutes, till it becomes a little thick

Add the crumbed khoya, mix well and simmer for further 10 minutes
khoya (mawa)(100 grams) - 10
Add the saffron dissolved in milk and mix well

Switch off the heat, add in the fried raisins and cashews and mix well

Garnish with slivered pistachios and almonds
pistachios - thinly sliced(1 tablespoon) - 13
