To begin making the Andhra Style Paruppu Podi, heat oil in a kadhai/wok & roast the red chillies for abaout 3-4 minutes
to 12 dry red chillies(10) - 2
When the chillies are roasted collect them in a plate
to 12 dry red chillies(10) - 3
In the same pan, add 1/2 teaspoon of oil & roast the dals - chana dal, urad dal, toor dal, moong dal and horse gramon low flame until golden brown
tablespoons chana dal (bengal dal)(2 gram)tablespoons black urad dal (split)(2)tablespoons arhar dal (split toor dal)(2)tablespoons yellow moong dal (split)(2)tablespoons horse dal (kollu/ kulith)(2 gram) - 4
When done, collect them in a plate

Allow the ingredients to cool down completely

Grind salt, jaggery, red chillies, hing into fine powder in a grinder
to 12 dry red chillies(10)salt - to tastejaggery(1/2 teaspoon) - 7
Then add in the dals & grind them into coarse powder

Serve this Andhra Style Paruppu Podi with hot steamed rice with a dash of ghee or gingerly oil and Keerai Sambar for a perfect South Indian meal
