To begin making the Kerala Special Vegetable Stew recipe, firstly wash and steam the vegetables (including onion) till they are fork tender

Heat a heavy bottomed pan with coconut oil and temper with the whole spices and curry leaves
coconut milk - thin(1/2 cup)coconut milk - thick(3/4 cup)to 12 whole black peppercorns(10)sprig curry leaves(1)coconut oil(1 teaspoon) - 3
Now add the grated ginger and garlic and saute' for 20 seconds only
garlic - grated(1)inch ginger - peeled and grated (optional)(1/2) - 4
Add the steamed vegetables and the thin coconut milk
coconut milk - thin(1/2 cup)coconut milk - thick(3/4 cup)coconut oil(1 teaspoon) - 5
Cook covered over low flame for 5 to 7 minutes

After 5 to 7 minutes, add the thick coconut milk, stir to mix and switch off
coconut milk - thin(1/2 cup)coconut milk - thick(3/4 cup)coconut oil(1 teaspoon) - 7
Add salt and it is ready to be served
salt - to taste - 8
Using fresh whole spices and fresh coconut gives the stew it's authentic taste
