Lobia Masala (Recipe In Hindi)
A high protein Punjabi recipe with cowpea, tomato puree, cumin seeds. Ready in 45 min, serves 3.

To make lobia masala, first soak the lobia in water for 2 hours
lemon juice - or tamarind water(1 teaspoon) - 2
Now put them in a pressure cooker with 1 cup of water and cook till it becomes soft
lemon juice - or tamarind water(1 teaspoon) - 3
After cooking, drain the water and keep it aside
lemon juice - or tamarind water(1 teaspoon) - 4
Now heat oil in a pan
oil(1 tablespoon) - 5
Add grated ginger and cook for 20 seconds
inch ginger - peel and tighten(1) - 6
After 20 seconds, add tomatoes and cook till the tomatoes become soft
tomato puree(1/4 cup) - 7
After softening, add turmeric powder, coriander powder, garam masala powder, green chillies, salt and cowpea
cowpea(1 cup)green chili - finely chopped(1)turmeric powder(1 teaspoon)coriander powder(1 teaspoon)red chilli powder(1 teaspoon)salt - as per tastecoriander leaves - little (for garnish) - 8
Mix, reduce the heat and let it cook for 15 minutes

After that add lemon juice and garnish with green coriander
green chili - finely chopped(1)coriander powder(1 teaspoon)lemon juice - or tamarind water(1 teaspoon)coriander leaves - little (for garnish) - 10
Serve the Lobiya Masala with Bundi Raita and Tawa Paratha for dinner
