To begin making Meghalaya Style Do O Kalai Recipe soak the black lentils overnight
black urad dal (whole) - soaked overnight(150 grams) - 2
Start by grinding the onions, ginger, & garlic together in a small grinder jar to a smooth paste
onion - chopped(1)tablespoons ginger - grated(3)tablespoons garlic - minced(2) - 3
Add a couple of teaspoons of water only if required
teaspoons lemon juice(2) - 4
Keep it aside

Take a pressure cooker and heat a little cooking oil in it
cooking soda - or baking soda(1/2 teaspoon) - 6
On a medium heat, add the green chillies and saute for a few seconds
green chillies - chopped (adjust)(3)red chilli powder - red chilly powder( to 2 )(1 tablespoon) - 7
Add onion-ginger-garlic paste and saute continuously so that the paste does not get burnt
onion - chopped(1)tablespoons ginger - grated(3)tablespoons garlic - minced(2) - 8
Once the raw smell disappears from the onion paste, add in the curry cut chicken and saute till well coated
chicken - (preferably with skin)(500 grams)onion - chopped(1) - 9
Once the chicken is well coated with the paste, add the red chilli powder
chicken - (preferably with skin)(500 grams)red chilli powder - red chilly powder( to 2 )(1 tablespoon) - 10
Mix it well till the red chilli powder coats the chicken evenly

Add the soaked urad dal lentils, salt to taste and cooking soda to the pressure cooker and mix

Now close the lid of the pressure cooker and cook on a low heat for a couple of whistles till the lentils are tender and soft and mushy to form like a gravy and the chicken is cooked as well

After a few whistles turn off heat, allow the pressure of the cooker to release naturally

Once the pressure is released, remove the lid and add in the lemon juice
