Sakkare Millet Pongal Recipe

To begin making the Sakkare Millet Pongal recipe, firstly heat milk and 1 cup of water together in a saucepan
foxtail millet(1 cup)liter milk - skimmed(1/2)water(2 cups) - 2
Once the milk is hot, add the washed millet to this, reduce the flame and cook the millet till it is soft
foxtail millet(1 cup)liter milk - skimmed(1/2) - 3
In the meantime, mix jaggery powder and 1 cup of water in a heavy bottomed pan and heat
water(2 cups)jaggery - powderd(1/2 cup) - 4
Heat till all the jaggery is dissolved and it has just started to boil
jaggery - powderd(1/2 cup) - 5
Add this jaggery syrup to the millet
foxtail millet(1 cup)jaggery - powderd(1/2 cup) - 6
Cook till the mixture comes together and starts leaving the sides of the pan

Switch off the flame

Add cardamom powder to this and mix it well
cardamom (elaichi) pods/seeds(2) - 9
In a small pan, heat the ghee and add raisins and cashews
ghee(1 tablespoon) - 10
Once they turn gold, pour it over the pongal and give it a mix

Garnish with grated dry coconut and serve hot
tablespoons dry coconut (kopra) - optional(2) - 12
Serve Sakkare Millet Pongal on its own as a sweet dish after your delicious South Indian meal
