Thulli Recipe (Broken Wheat Halwa)
A vegetarian Indian recipe with broken wheat (dalia/ godumai rava), water, fennel seeds (saunf). Ready in 40 min, serves 4.

To begin making the Thulli recipe, mix lukewarm milk and saffron in a small bowl and keep it aside
milk - lukewarm(1 tablespoon)saffron strands - few - 2
In a heavy bottom cooking vessel, add 1 tablespoon of ghee and fry cashews on low flame until they turn light brown
tablespoons ghee(4)cashew nuts(10) - 3
Turn off the flame and set aside

Now in the same pan, add remaining ghee and fry broken wheat until lightly coloured on low flame
broken wheat (dalia/ godumai rava)(1 cup)tablespoons ghee(4) - 5
Set it aside

Now in the same pan add water, fennel seeds, milk+saffron mixture and cardamom powder
water(3 cups)fennel seeds (saunf)(1 tablespoon)cardamom powder (elaichi)(1/2 tablespoon)milk - lukewarm(1 tablespoon)saffron strands - few - 7
Give the mixture a stir and allow it to boil

Now lower the flame and start adding the broken wheat by continuously stirring to avoid lumps

Cook till broken wheat is completely cooked

Now add sugar to the mixture and give it a nice stir
-/2 sugar(1 cup) - 11
Cook until the sugar dissolves
-/2 sugar(1 cup) - 12
Garnish with fried cashews and serve hot or at room temperature

Serve Thulli as a dessert after your everyday meal of Dal Tadka, Makai Wali Bhindi and Phulka
