To begin making the Vegetarian Mexican Fried Rice recipe, heat a heavy bottomed pan on high flame and add butter
cooked rice(2 cup)tablespoons butter(3) - 2
Add garlic and onion and cook for 1 to 2 minutes
onion - finely chopped(1/2 cup)cloves garlic - minced(4) - 3
Then add green pepper and tomatoes and let it cook for another 3 minutes
tomato - finely chopped(1/2 cup)green bell pepper (capsicum) - finely chopped(1/2 cup)tablespoons tomato ketchup - or tomato puree(2)cayenne pepper - or red chilli powder (adjust according to your taste)(1 tablespoon) - 4
Next add corns and beans and give a nice stir

Add seasoning at this stage

Add salt, red chilli powder, tomato ketchup and vinegar

Cook for another 3 minutes
