    To make the zucchini, firstly add rice flour, curd, water and salt in a bowl

    Beat well

    Now heat oil in a pan

    Add mustard seeds and let it splutter

    Now add turmeric powder, asafoetida, curry leaves, garlic and cook till the garlic turns light brown

    Now add green chilies and cook for 30 seconds

    After 30 seconds, slowly add the rice flour mixture and keep stirring

    Add 2 to 3 tablespoons of water so that it cooks easily

    Cook until thickened

    This will take at least 5 minutes

    Once cooked, take it out in a bowl

    Add ghee or oil on top and garnish with green coriander

    Serve the Ukad with ghee and tomato essence
