Mushroom Biryani Recipe
A vegetarian Indian recipe with basmati rice, button mushrooms, onions - thinly sliced. Ready in 50 min, serves 4.

To begin making the Mushroom Biryani recipe, wash basmati rice and soak in water for at least 30 minutes
basmati rice(2 cups) - 2
Meanwhile clean the mushrooms and chop in two halves
button mushrooms(2 cups) - 3
Heat a heavy bottomed pan, add ghee + oil with cinnamon, cardamom, cloves and bay leaf
sunflower oil - and ghee as requiredinch cinnamon stick (dalchini)(1/2)cardamom (elaichi) pods/seeds(2)bay leaf (tej patta)(1) - 4
Add chopped onions, ginger garlic paste and stir well till the smell goes off
onions - thinly sliced(2)tomatoes - finely chopped(2)ginger - grated(1 tablespoon)garlic - minced(1 tablespoon) - 5
Add finely chopped tomatoes and sprinkle some salt to it, cook until the tomatoes become mushy
tomatoes - finely chopped(2) - 6
Add spice powders (red chilli powder, turmeric powder, coriander powder and garam masala) and mix everything well
coriander (dhania) leaves - few sprigsred chilli powder(1 teaspoon)coriander powder (dhania)(2 teaspoon)turmeric powder (haldi)(1/3 teaspoon)garam masala powder(1 teaspoon) - 7
Add cleaned and chopped mushrooms and stir for 3 minutes or until it shrinks slightly
button mushrooms(2 cups)tomatoes - finely chopped(2) - 8
Add 3 cups of water and 1 cup of coconut milk to it
coconut milk(1 cup) - 9
After it starts boiling, rinse the soaked rice, drain the water from rice and add it in the pan
basmati rice(2 cups) - 10
Cover and cook on medium flame for about 8 minutes and turn off the flame

Add some chopped coriander leaves and it is ready to be served
tomatoes - finely chopped(2)coriander (dhania) leaves - few sprigscoriander powder (dhania)(2 teaspoon) - 12
Serve Mushroom Biryani with Burani Raita, Beetroot Raita or any other raita of your choice
